Whenever I ask the twins for a logical justification/explanation for their problematic behaviour, they’re like “It is what it is. You can’t question it.” Is that the best they can come up with?

I guess it is if they are like you say, problematic. ;-) They could say, take it or leave it, we are who we are get used to it.

"They're like" is should be omitted altogether. It is a horrible usage of English when substituted for "they respond". Everything else is grammatically correct.

"they say, 'It is what it is.'" Not "they're like". That's informal teen slang.
