What's the best book on science?

Preferably not demanding copious prior knowledge. Something easily palpable.

I have enjoyed many of Isaac Asimov's nonfiction works of science, of which there are many. His book titled "Beginnings" would be a good place to start. (Well, the title does say Beginnings, after all.)

I grew up with my nose buried in the Encyclopedia Britannica - the old, literate version. You could do the same and the modern version, more or less, is Wikipedia. The science (which science?) section there is real decent.

I infer from your question you are a layperson with respect to science. I would strongly recommend Bill Bryson's "A Short History of Nearly Everything".

Check out "The Varieties of Scientific Experience" or "The Demon-Haunted World: Science as a Candle in the Dark." Both are by Carl Sagan, and both are excellent primers on scientific thought.

If you check your local library I bet you'll find a book by Bill Bryson, called A Short History of Almost Everything. It's not exclusively science, but picks a lot of the low hanging fruit. . .
