To me, only 'an apple' is correct. We all know apples come in more colours than red, but still red is the colour most commonly associated with apples.

I think you should use something else as your descriptor. Apples come in all sorts of colors other than red. Anyway, it should be an apple.

"Color of apples." I think it's a really bad phrase, very "romance novel-ish."
