How high can someone fly in an unpressurized cabin? For this question, I'm interested in the person, not the aircraft.?

Assuming the aircraft's service ceiling is arbitrary (space for all I care), and the person brought along oxygen to breathe, what is the highest we can go until the pressure is just too low?

48,698 ft, is the record highest with no pressure suit. A pressure demand oxygen mask is required, the continuous-flow margarine dish airline passengers get will not keep you conscious above 27000 feet or so.

Bombers in WWII flew up near 35,000 feet with oxygen and no pressurization. The P-51 Mustang's ceiling was about 42,000 feet. It was not pressurized either.
