In college, do I get to pick a new name for the language classes I m taking? Such as a Spanish name for Spanish class?

Depends on the language and on your name. For instance when I took Japanese I had to learn how to say and write my name in Japanese, but that's different than having a true "Japanese name." Meanwhile, I had a friend named Will, who took German, so his teacher called him Wilhelm.

Only in a beginning language-learning class. Once you're able to read Spanish, you'll be taking classes in which you read and discuss Spanish literature, or else classes in which you learn about Spanish linguistics, and in classes like that you aren't learning "Spanish conversation" and the students don't pretend to have Spanish names; they're studying literature and linguistics just as students in English lit and linguistics classes do.

That depends entirely on the teacher. You can ask the teacher if you can use a Spanish name.
