I am in my 30's and have been paying cash for school living off my savings. Will I get all the money I have spent on tuition back tax time?

If it's an accredited institution that issues a 1098T form, you can deduct the tuition from your income. But if you're not working, that doesn't help much. Possibly you would qualify for the American Opportunity Credit, or Lifetime Learning Credit, which could give you some money back. More importantly, if you are not making much or anything right now, be sure to file a FAFSA form. You might qualify for reduced or no tuition, or some scholarships.
