is grammar correct in this sentence? "The new mobile application will be deployed in the week of the 16th of July." or should it be: "The new mobile application will be deployed on the week of the 16th of July." Is "in" or "on" correct in this sentence?

In most commercial uses, the word is "released" rather than "deployed". In my experience in Britain, "deployed" is more often used in military circles, not in sales or commercial circles.

Eliminate in (and forget on). Make it: "The new ... will be deployed the week of July 16th."

"during"

Neither. "The new mobile application will be deployed the week of the 16th of July." is correct.

Neither one. "during the week" or just "the week of" with no preposition before it. "Deployed" is very jargon-y and pretentious.
