I have reduced my calorie intake several these last couple of days and today I gained 1-2 pounds of water weight from what I weighed the night before. My stomach feels extremely bloated and stretched right now.

Yup. Not a good thing to be doing. Won't make you skinny at all.

You will gain weight in the long run from stupid dangerous diets like this. Your metabolism will be screwed and every ounce you lost and more will pile back on when you eat normally.

Yeah, and your body fat will go up in starvation. Starvation diets don't work.

That's what happens when you suddenly reduce your calorie intake. It slows down your metabolism as your body goes into survival mode and starts to store fat.

No, but it's normal to gain fat. Do yourself a favor and look up the anorexogenic cycle.
