Yes, sometimes not all the insides are removed. I typically find portions of 'lung' tucked into the overhanging sections of the rib cage. My cat loves those pieces.

yeah its a vein, its normal to find veins in chicken, its completely harmless. take it out if you like but leaving it in is also fine
