In 'I walked up to the/a barman.' the article should be 'the' even if we don't know the barman?

Yes, because it was a particular barman, not any, unspecified barman.

In that case "the" means "that particular barman." You don't have to know him to use "the"!

If there are more than one barman, you can use "a". If there is only one, you should use "the".
