Is the correct spelling "esophagus" or "oesphagus"?

I was wondering because one doctor I know spells it with an O while another doesn't

Could be a medical or British spelling. So maybe both are fine.

In Britain, in a general context, I would expect to see "oesophagus". I have only heard it pronounced as "ee-sofag(u)ss", with the stress on "ee". Very likely Americans would spell it "esophagus" or maybe even "esofagus".

oesophagus oe isn't really a diphtong. It's more of an O with an umlaut: ö Unfortunately, that sound doesn't exist in English, and anglos turn it into an "ee"-sound, just like they do with ae in "faeces"

Increasingly, "e" is the more common way to spell it and "oe" (as a diphthong) is becoming more rare.

Oesophagus is the spelling used in British Commonwealth countries. Esophagus is American English. Americans dropped the unspoken 'o'.
