    Won suggests the heart was available and, in competition with others, it was won whereas stole suggests the heart was not necessarily available or for grabs, but it was stolen, nonetheless.

    "He won my heart" implies that he worked at it. "He stole my heart" doesn't indicate any effort on his part.

    I'm with @Jake on this. They BOTH mean that the person speaking has fallen in love with the person they're speaking about.

    He won my heart is something that happened to him. He stole my heart is something that happened to you.

    To me, there is no difference. In both expressions, the phrase means that the man has behaved in a manner that caused the other person to fall in love with him.
