Surely, when the sun is hiding behind a thicket of clouds, the blue sky should fade back into space cos the suns gone.

There is nothing in space to see, a complete void.

That’s the thing - if the clouds are blocking the sun, they’re *also* blocking the sky, so... we’ll never see space - just stuff in it.

The sun is not gone if its behind the clouds. It is still in the sky.

The Sun is 93 Million miles away not just above the clouds. The Earths atmosphere is still being illuminated by the Sun whether there are clouds or not

"Space" is transparent. No one can ever see it.

First because the clouds would block the stars as well, and there is sufficient light coming from the sun to wash out the stars. Even during a solar eclipse the corona is bright enough to wash out the light from the stars.
