I'm going on a trip 280 miles away in a 31 gallon tank truck that gets 20 miles to the gallon highway... How many times will I have to stop to fill up?

31*20 = 620 miles Fill it up before you leave. You won't need to fill it again.

Once. You get 31 x 20 or 620 miles range. Your trip is 280 x 2 or 560 miles long. You have enough gas in one tankful to do the trip.
